Bagels 🥯 

Easy Peasy 


This is the easier way. I probably shouldn't boil them a minute but a half minute each side so the yeast keeps rising. I like them thicker but can't complain for first try. 
It can still be toasted if you like...

Great with soup, egg sandwich, locks and bagels, more! This bagel is so stinking ugly, I know 😂 I'm saying that, not a cyber hacker.

I washed each side with egg, sprinkled cinnamon and sugar, then sprinkled "everything bagel" by Badia. Next time, I will only boil each side 15-30 secs and maybe they will rise more. I also need to let dough initially rise two hours instead of one. I will need a bigger bowl because one hour rise went right to the top. Maybe I should let rise more than 30 minutes but they were quite thick at 30 minutes. 
That rise isn't even necessary using Little Village Homestead's   method. Just let the dough rise once. 

Now I'm ready for tomorrow 😂 Jewish bread for Easter! 

If you want big beautiful bagels, this lady of Little Village Homestead did a few different things 

Once dough rises once, that's it. Rise 2 hrs,Not 1. 
No more rising. Her method is shorter in time!
Just form the bagels and add a tsp of baking soda in the water. and 
boil about 30 seconds ea side.
I killed my yeast, I think. I'm going to add a few drops of homemade vanilla to the recipe too, next time.  The beans were soaked in Russian Vodka - but that bottle is almost empty. I got bourbon in 2023. And recently I got Tennessee Whiskey!  😂

Now THAT'S a bagel!!! My toaster has wide slots and the next day after they are baked, they toast very well. 

I'm going to try this recipe asap! I'm a fickle baker 🤣

Wow, I'd think all that boiling would kill the yeast yet your process strengthens the yeast so much it doesn't kill it. I can't wait to make these bagels! Add 1/2 tsp of baking soda to the water - along with his suggestions. I'm going to use molasses.

Renee's are beautiful! I made her recipe today,

using molasses instead of sugar. Because I've had so many problems with my oven and stove, it's my conclusion this landlord remotely controls it. They are probably adding gas to what I bake. I have small dutch ovens but I will bake my bagels in those (preheated) to keep the gas away.

🔴 YOGURT 101 - SOURCE, SANDOR KATZ 
He has a phD in Foodology ...yes, I can't remember what that major is called but he has a phD from Cornell University in it. That's a big "wow"...I like the commercial.flavored yogurts too but his instructions help you retain that whey rather than have it as leftover. It's filled with probiotics. 

Instead of using a cooler, I modified my recipe to using a Crock-Pot because I make 1/2 gallon at a time. 

I made some more yesterday and thought, oh great, 12 hours is up at 3am! So what, I will just sleep through it...But I woke up at 3 am so I checked it. 

Done! If it stays thick in the jar, it's done. Put it in the fridge! 
That's a half gallon's worth. I use what jars I have on hand. Make sure the lids are in good shape. I wash my jars in the dishwasher so they're sterile. Not medical-sterile but pretty close One of the things the illegal intruders also like to do is steal the lids to make the jars useless. 😤
I put the jars back in the crockpot I used to heat the milk in. Heat it to 180°; turn off heat, then when it's 118° add 1/4 c yogurt from a prior batch. Stir patiently and thoroughly for 1 to 2 minutes. Then fill the jars, close each lid as you fill them because you want to retain that mild heat. I wash out the crockpot and put hot water in it. It's probably 140° maybe a little less. You want to maintain that 118° temp for 12 hours as best as you can. I leave space to add boiling water to it after a few hours because I'm lazy and don't check it after that. Because I wrap the turned-off crockpot with towels, it retains enough heat to make this yogurt culture and you don't need to separate out the healthy whey! 

Plain yogurt can be used in so many recipes - making a "brine" for chicken to soak in and more. Jose el Cook gives a quick recipe on making that "brine" to soak the chicken in all night. I love it on oatmeal instead of milk. It has more probiotics than milk. 
     brine is not what it is, I just can't think of the right word right now...you soak the meat overnight and then do a few preps and bake it for dinner. 
Speaking of probiotics, heavy cream has more probiotics than milk, so don't be afraid to use it. If you have a healthy gut, you'll be able to burn calories. Weight gain is caused more from unhealthy guts than anything else, in my opinion. Even "genes" . Sometimes an unhealthy gut can be from stress, unhealthy living, or parasites! Yes parasites - Off fresh food you think is so good for you so you grab that lettuce and eat a salad but didn't wash the microbial parasites off, which even make your food last a shorter time in the fridge. I've done that. Some people have sworn by washing with hot water right after they are brought home, sticking all those fresh foods in the fridge. Then it's done. And hot water is more able to wash off parasites and chemicals from pesticides or even fertilizers that are excess. 


I use Sandor Katz' of Cornell University recipe! But my smaller portion resulted in using a crockpot for a water bath.

I make my yogurt the slow way because when the temperature reaches 180° from being on slow cooking, it keeps its heat longer. I turn off the heat and let it cool to 118°. That takes about two hours. At 118° you add the culture and fill the jars and even if you don't want to clean the crockpot at that time, just put the jars in a hot water bath and cover the crockpot well. I put it back in the heating part but it isn't on. I don't know if it helps retain the heat more but it probably does. Just make sure the crock is dry on the outside before you put it in the heating part. Cover it with toweling. As long as your toweling gets a little damp from water or steam, let it hang dry, fold it for the next venture. But wash it if it may be dirty.

I think yogurt is very beneficial. I'm still struggling with a catastrophic weight gain that occurred after I moved to this place run by crooks who let people illegally enter my apartment and vandalize it like Mafia! They poison my food. I had to be on Cipro for 10 days twice. And I stayed sick and weak for weeks after that. I didn't miss the hospital. People have had untimely deaths there and I was abused for the last time - Never again! The ER doctor said my torn hamstring was just a contusion to further harm me because they categorize people and have their own social hitlist! Telling me they can't see any injury because there's too much blood from internal bleeding was the worst! I had a Grade 4 hamstring tear! I was transported by ambulance! A train passenger caused it!

HERBS AND SPICE

Buy Herbs and spices! Dehydrate what you can and make your own,  too. These are from Grand Central Station Market in NYC ... Choose 6, for $49 + tax And I just had to get some "Everything Bagel"....I will never be able to make bagels as good as Brueggers nearby but these come close...


Infuse garlic in your Olive oil! Delicious and so healthy! Place the cloves in oil in a baking dish and bake at 250...I recently learned this.

Maybe the baking method infuses more and you don't need to cut them up. I need to try that. .. What I did was use my crock pot and place garlic cloves roughly chopped in it. Don't overcook. You'll smell the aroma when it's infused. You could either use a hand mixer to blend in the cloves after that or take them out and use for other recipes. The clove pieces come out hard cooking this way. I bet when they are baked in a lid with cover they stay soft. ...

And bake a bunch of tomatoes to make use of the oven. Jose el Cook shared a great short video about that - cut up the tomatoes in cube-like portions, add oil and seasoning. Bake slow 4-5 hours and notice the flavors in those bites - they can be added to sauces, place on crackers or bagels with cream cheese...they can be used many ways. 

When I get takeout from China King, I stretch their tasty food by adding garlic and whatever I have from other cooking. I add more water or broth from cooking cabbage or soups... 
It stretches my budget and I have a professional meal last longer. Sometimes I use Ramen noodles - Korean flavored noodles are my favorite since I tried them recently - 
The same concept can be applied with food from the Market. 

I also have some from my local market...
Rosemary and oregano and ginger  are great for us. Make tea with any of them. Use leftover to cook rice in..nothing gets wasted... I want to make bagels today. I'll probably use Little Village Homestead Recipe - because it's faster but this newer recipe seems absolutely delicious. Not a lot of fussing but it takes time and helps develop flavor that way.
