Enchilada Casserole Recipe - yum!

Use a baking dish, 9x13; 375°oven

Ingredients
1.  5lb ground lean beef
2.  1pkg taco seasoning
3.  10 totillas
4.  1/4 c water
5.  1 med onion, sliced
6.  1 can fire roasted diced tomatoes
7.  1 c corn, frozen is best
8.  1can black beans, drained
9.  1 can refried beans
10.  2 cans enchilada sauce
11.  2 - 8oz bags of shredded cheese
12.  sliced olives, drained

Instructions
Cook up beef and onions; add taco seasoning and water (mix thoroughly); add corn, beans, and 1 1/2 cans of enchilada sauce. (mix thoroughly)
Let simmer 3min
    Heat up refried beans; then spread on each tortilla

Assembly
1.  Pour rest of sauce in can in the baking pan
2.  First layer: 5 tortillas
3.  Second layer: tortilla filling
4.  Third layer:
Cheese
5.  Fourth layer:
5 tortillas
6.  Fifth layer:
Tortilla filling
7.  Sixth layer:
Cheese
8.  Top: sliced olives

Cook 20 min; let settle 5 min; serves like lasagna 😋

       1/9/2022 update on cooking. My Perdu drumsticks looked great, nice and clean. I took the Polenta out, noticed the bag was open but thought I did it since I use scissors. But somebody obviously added plastic or silicone beeds from my drawer. 


 




I put leftover Polenta in a clean jar. Washed in dishwasher. 

I thought it would be good. But it had a weird industrial smell to begin with ...about 5 minutes after I put them in the oven. 

I think I will make some banana Bundt cake now, to clear my head. 😳


My door reminder makes no difference... Maybe I should draw pictures...they like to pull this Mafia crap on people and make a movie from it after they get killed - or take credit for making them famous... WTF...I don't sell fast foods anymore. I could give a crap if anyone knows me. With a few exceptions, of course.

Here's another recipe from a racey hotel from the past. I love it. But mine tried out like a hash consistency. Not meatloaf you can cut up. I don't like creamed corn and used regular corn But I used cream of mushroom soup instead of mushrooms. 
 The taste is wonderful. 
My chili powder was stolen out of my apartment so I used Chinese 5 powder seasoning with paprika, a few shakes of cayenne, and salt and pepper.

Sorry for the weirdness of lighting. I have an LED light in my kitchen.  Guess that's what did it but my pictures don't always turn out like that. As you may notice in the bowl, it's more like a chip dip - or you can put it on crackers or have it for breakfast with a fried egg on top.
